    Why You’ll Love This Recipe

    • Convenient to Make: It’s quick and easy without compromising on taste! With just your microwave and 5 minutes of your time, you can transform a handful of simple ingredients into a tasty dessert, perfect for one.
    • No Waste: Got that one ripe banana sitting on your counter? Perfect! Use it for this banana cake in a mug - no need to bake an entire loaf or cake.
    • Fluffy Texture: The combination of these ingredients yields a soft, fluffy cake with real banana flavor that makes it feel indulgent while still being wholesome.
    • A Perfect Portion: The mug acts as your mixing bowl, baking dish, and serving dish, allowing for an individual portion that’s both the perfect size and satisfying. No leftover cake staring at you all week!

    Ingredients

    • Ripe Banana: The foundation of this recipe that acts as both a natural sweetener and a binding agent, infusing moisture and that familiar banana flavor. No bananas? Swap for unsweetened applesauce or pumpkin puree.
    • Oat Flour: A nutritious alternative to traditional white flour, creating a denser and chewy texture.
    • Cacao Powder: Adds rich chocolate flavor and deep color.
    • Chocolate Protein Powder: Binds the ingredients and boosts the protein content of the chocolate banana mug cake.
    • Peanut Butter: Always a reliable choice with vegan baking as it doubles for fat and flavor for the cake.
    • Dairy-Free Milk: Choose soy, almond or oat milk as the liquid agent that blends everything together smoothly.
    • Sweeteners: Maple syrup is my go-to for a more natural sweetness, while vanilla adds a warm, cozy flavor.
    • Baking Powder: Ensures a light texture by helping the cake rise, especially with more dense ingredients like banana and peanut butter.
    • Salt: A dash balances the sweetness of the dessert.
    • Chocolate Chips: Use dark, semi-sweet, or white chocolate chips—or chocolate chunks for extra indulgence!

See the recipe card below for exact ingredient amounts, nutritional information, and detailed instructions.

    Variations

    • Fruity Touch: Mix in berries like blueberries or strawberries, fresh or frozen, for a burst of flavor. Peeled and chopped apples or pears work too!
    • Bit of Crunch: Add nuts or seeds to elevate your microwave banana mug cake. Chopped walnuts, pecans, or almonds for a crunchy texture and added flavor.
    • Nutella Swirl: Drop in a spoonful of vegan hazelnut spread before microwaving for a rich chocolatey swirl surprise!
    • Spice it Up: Mix in cinnamon or nutmeg for a cozier vibe. They complement the banana flavor perfectly!

    Serving Suggestions

The options for serving up this dessert are as varied as the flavors you created! Here are a few ways to enjoy your single-serving cake.

    • Top with vegan whipped cream and garnish with fresh fruit and mint for a light, classic version.
    • Drizzle with dairy-free caramel dip or more melted chocolate for a more decadent dessert.

    Expert Tips

    • Microwave in Bursts: Start with shorter heating times, 10-20 seconds, because microwaves vary. Check for doneness by inserting a toothpick or fork in the center.
    • Don’t Overfill: Leave at least an inch of space at the top of your mug to prevent overflow as the cake rises.
    • Grease the Mug: Lightly grease the mug with oil or non-stick spray to prevent the cake from sticking.
    • Make Ahead and Storing: Mug cakes are best fresh, but if you have leftovers, cover with plastic wrap and store in the fridge for up to 2 days. Reheat for a few seconds to restore softness.
