These apple baked oats with a caramelized apple topping are a delicious fall breakfast or dessert recipe! They are vegan, gluten free, and nutritious!

What you will need to make the apple baked oats

    Baked Oats Ingredients

    • ½ cup oats
    • ¼ teaspoon baking powder
    • 2 tablespoon maple syrup
    • ¼ cup applesauce
    • ¼ teaspoon vanilla
    • ½ teaspoon cinnamon
    • ⅛ teaspoon nutmeg
    • dash of salt
    • ½ cup dairy free milk
    • ½ cup grated apple
    • 2.5 tablespoon chopped pecans

    Topping Ingredients

    • ½ apple
    • 1 tablespoon chopped pecans
    • 1 teaspoon coconut oil
    • 1 teaspoon maple syrup
    • dash of vanilla
    • dash of cinnamon

    How to make the oats

    • To create the oats, add the oats, baking powder, maple syrup, applesauce, vanilla, cinnamon, nutmeg, salt, and milk to a blender. Blend all of the ingredients.
    • Grate your apple and measure out ½ cup. Fold it into the blended oats. Also add the chopped pecans. Do not blend the apple and pecans!
    • Transfer the batter into an oven safe ramekin and make the oats for about 30 minutes at 400F/200C. You can bake for more if you want the inside to have more of a cake texture, or less if you prefer your baked oats to be gooey.
    • While the oats are baking, chop ½ apple into small cubes. Add it to a pan over medium heat along with the chopped pecans, oil, maple, vanilla, and cinnamon.
    • Cook the apple and pecans for 5-7 minutes, stirring throughout so that it doesn’t stick to the pan.
    • Once the oats are ready, top them with the caramelized apple topping and dig in!

This looks delicious! Could a large batch of this be made in a large baking dish?

Yes! You can definitely double / triple the recipe and bake in a larger dish accordingly 🙂

Are you able to make these the night before, put them in the fridge and throw in the microwave the next morning for a quick breakfast? They look delicious but I value my sleep too much to make a 40 min breakfast!
