These apple pancakes are one of my favorite fall themed treats that I have made so far this season. They are made without milk or eggs, so they are vegan and they are full of delicious apple flavor and spices! The pancakes themselves are so delicious, but when you add the caramelized apple topping, they are just divine! Here is how to make these apple pancakes.

What you will need to make these apple pancakes
The ingredients in these apple pancakes are simple. You will need the basics for vegan pancakes, plus a grated apple and some delicious fall spices. Here are the specifics.
Note: There are two parts of this recipe, the pancakes themselves and the caramelized apple topping, so that is how I will separate the ingredients and instructions of this recipe.
Pancake Ingredients
- 1 cup flour
- 1 tablespoon sugar
- 1 tablespoon baking powder
- ½ tablespoon cinnamon
- ½ teaspoon nutmeg
- ½ teaspoon allspice
- dash of salt
- 1 cup dairy free milk
- 1 tablespoon coconut oil
- ½ heaping cup of shredded apple
Caramelized Apple Topping Ingredients
- 2 small apples
- 1 tablespoon coconut oil
- 1 tablespoon maple syrup
- ¼ teaspoon cinnamon
- ¼ teaspoon vanilla
How to make your pancakes
Pancakes
- Combine all of the pancake ingredients in a large bowl.
- Set aside for five minutes so the batter can set.
- Grease your pan with coconut oil and add about ¼ cup of batter to the pan. Cook for a few minutes and flip.
- This recipe makes about seven pancakes.
Caramelized Apples
- Chop the apples into small pieces.
- To a pan, add the coconut oil, maple, cinnamon, and vanilla. Mix them well and then add the sliced apples.
- Cook until you see the apples start to caramelize. Usually about ten minutes over medium heat.
- Stack up the pancakes and add the caramelized apples on top. Enjoy!
