  • HAPPY SUNDAY🤩 wanted to share this amazing meal I had with some friends the other day at @malibufarmmiami ! The location was amazing- swipe the see the beautiful ocean view😍 I don’t think anything beats great food with with an incredible view😌

We had “vegan chop” salad with kale, romaine, butternut squash, beets, avocado, & chickpeas and the “vegan coconut” with tofu, veggies, black & white rice, & coconut sauce. Also some steak wraps for my non vegan friends & lots of great lattes & sangria😋🍷

I’ve got more fun model volleyball events today & I’m excited to spend the day at the beach with friends🤗 hope you all have a lovely and relaxing Sunday❤️☺️
  • Happy Saturday friends😍 I hope you’re having a great start to the weekend🤗 Today I’m going to a really fun volleyball tournament here in Miami! It’s called @modelvolleyball and all of the model agencies in Miami compete against each other & the winning team wins a trip to Haiti where the winners get to do some awesome mission work in the community☺️ I’m not playing because I’m completely uncoordinated and pretty awful at every sport😂 But I’ll be on the sidelines supporting my ladies🤗

I also accidentally found this absolutely delicious vegan chocolate chip cookie the other day at @wholefoods and got one for myself & my roommate who is also vegan☺️ I just love finding vegan treats😍

  • Happy Friday friends🤩 I’ve tried so many incredible places in Miami that I can’t even keep up😍 Yesterday my friend and I discovered an adorable place called @dreamer_miami and had YET another açaí bowl😂 I swear, beautiful weather makes me crave fruit smoothies so much😂

  • HAPPY WEDNESDAY MY FRIENDS😍 Only one more day until Valentine’s Day🥰 Today I’m sharing my FAVORITE Valentine’s Day recipe so far- CHERRY PIE🍒🥧

I’m so stoked to share this one with you guys because I teamed up with an amazing company- @sealtheseasons to make this recipe. All of their frozen fruit is locally grown in the USA- rather than shipped from all around the world. This supports local farmers, ensures more nutritious produce & promotes sustainability, all of which I am SO passionate about! You can now find their frozen fruit in the freezer section of your local Meijer store🤗

For this recipe, I used their Michigan dark sweet cherries to make this delicious cherry pie🤤 Here’s the recipe:

Vegan Cherry Pie:
1 large bag of @sealtheseasons sweet Michigan cherries (32 oz)
1/2 cup coconut sugar
Juice from half a lemon
Zest from half a lemon
3 tbsp corn starch
1 frozen pie crust
Combine all of the ingredients in a large bowl and mix well. If you’d like, you can cut your cherries in half. This step isn’t necessary, but I found that the cherries released more flavor this way. In the meantime, poke several holes into your pie crust with a fork and bake your frozen pie crust in the oven for about 10 minutes on 400*F (this is so the crust doesn’t get soggy). When your crust is done, transfer your pie filling into the crust and bake for an hour. I topped mine with some vegan whipped cream! This recipe was sooo delicious and I hope you guys try it out😋

  • Day✌🏼 of Valentine’s Day recipes🥰 Today I wanted to share my “red velvet” beet pancakes🥞 A healthy & delicious breakfast treat for Valentine’s Day, or really just any day😜

BEET PANCAKES:
1 cup whole wheat flour @bobsredmill
1 tbsp ground flax
1 tbsp beet powder @lovebeets
2 tbsp coconut sugar
2 tsp baking powder
1/2 tsp salt
1 cup almond milk @malkorganics
1 tbsp apple cider vinegar @bragglivefoodproducts
1 1/2 tbsp coconut oil @vitacoco
1 tsp vanilla
Directions:
Make your flax egg (1 tbsp flax + 3 tbsp water). Make your “buttermilk” (almond milk + apple cider vinegar). Set both aside for ~5 minutes. Mix your dry ingredients in a separate bowl. Combine them to the flax egg and buttermilk. Then combine the rest of the ingredients. It helps if you blend them all with a hand mixer. Cook your pancakes over medium heat for about 2-3 minutes, then flip to other side and repeat. I topped mine with @foragerproject vanilla cashew yogurt, berries, and kiwi😋

  • In honor of Valentine’s Day this week, here is my recipe for some bomb vegan red velvet cupcakes😍🧁

These are the easiest cupcakes to make! I used a store bought red velvet mix & veganized the ingredients instead of mixing it with the usual butter and eggs. Here’s how I made these!

Vegan Red Velvet Cupcakes (from a box):
1 box of red velvet mix (most brands are vegan, but make sure to read ingredients)
1 cup unsweetened applesauce
1 cup plant milk
Combine the ingredients until you get a batter consistency. Line your muffin pan with paper cups and pour the mix into each cup. Bake at 350*F until you can stick a toothpick into a cupcake and it doesn’t come out red. Because I wanted to make this recipe the simplest vegan cupcakes, I got store bought white frosting (again, most are vegan, but check the ingredients). I topped my cupcakes with the vegan white frosting & some raspberries after they had cooled off❤️

Vegan cupcakes can be so hard to find sometimes, but I wanted to share a ridiculously easy way that you can make your own at home! They’re not sugar free, gluten free, or in any way healthy but I think they’re a nothing wrong with treating yourself from time to time☺️ They’re also perfect to bring to parties or to share with friends!

  • HAAAAAPPY SUNDAY FRIENDS😍 This morning my roommates and I had the most amazing treats at @yokomatcha 😍 This cafe has so many vegan treats & drink options and ALL of them have matcha in them🍵💚

We had the Rose Matcha Latte, Queen of Matcha Cookie, & the Matcha Nirvana Donut and they were all amazing! I’ve never had a rose matcha latte & it was so unique and delicious! And how cute is that flamingo straw🙈

  • Hello friends🥰 Happy weekend! This week I felt like baking (what’s new😜) and made my all time FAV peanut butter cookies for my Miami agents & my roommates🤗
.
I’m currently living in a pretty small model apartment with a tiny toaster oven and very limited kitchen utensils, so baking these was a little bit of a challenge😂 But you gotta make the best with what you’re given😜 besides the few burnt cookies in the back, they turned out amazing! And there’s nothing that makes me feel happier and more excited than baking & especially baking for other people☺️

VEGAN PEANUT BUTTER COOKIES:
1 cup peanut butter @365bywholefoods
3/4 cup whole wheat flour
1/2 cup coconut sugar
1/2 cup @intheraw stevia
1/4 cup plant milk
1 tsp baking soda
1/4 tsp sea salt
Mix all of the dry and wet ingredients separately first, then mix together. Bake for 10 minutes at 350 degrees🍪
