    Sometimes you just need chocolate cake—fast. This vegan black bean mug cake is rich, fudgy, and packed with plant-based protein and fiber thanks to the secret ingredient: black beans! Don’t worry, you won’t taste the beans at all—just moist chocolatey goodness. Plus, it’s made in under 2 minutes right in the microwave.
    This is the perfect single-serve dessert when you’re craving something sweet but want to keep it nourishing and wholesome.

    What you will need

    For the chocolate mug cake, all you will need is

    • ⅓ cup Muggins mix from Wellbean
    • ¼ cup plant milk

    The pistachio filling is optional, but tastes so so delicious, and I highly recommend adding it! See below what you will need:

    • 1 tablespoon pistachio cream
    • 1 teaspoon coconut oil
    • I used a pinch of matcha powder for color

    How to make the mug cake

    In a bowl, whisk together the muggins mix and plant milk.
    In a separate bowl, whisk together the pistachio cream and coconut oil. Add the pistachio filling in the middle.
    Transfer half of he batter and make a small hole in the middle.
    Add the rest of the batter on top and top with more chocolate chips, if you wish!

    Tips & Variations

    For extra gooeyness, press a square of dark chocolate into the center before microwaving.

    If you prefer a different flavor, you can replace the pistachio butter with peanut butter, almond butter, cashew butter, or even adding more chocolate in the middle!

    Top it with berries, a dollop of vegan yogurt, or a drizzle of nut butter for an indulgent finish.

    Mug Cake Ingredients

    Instructions
     

    • In a bowl, whisk together the muggins mix and plant milk.
    • In a separate bowl, whisk together the pistachio cream and coconut oil.
    • Transfer half of the batter to a mug, add the pistachio filling, then add the rest of the batter.
    • Top the mug cake with extra chocolate chips, microwave for 90 seconds, and you're done!
    • Note: In this recipe, I made an extra-large mug cake, so I doubled the recipe listed above😊 Your mug cake might be a little smaller if you use the listed recipe!
