Ingredients
  

  • ½ ripe banana
  • ½ cup oat flour
  • 1 tablespoon peanut butter
  • 1 tablespoon cacao powder
  • 1 tablespoon vegan chocolate protein powder
  • 1 tablespoon maple syrup
  • ¼ teaspoon baking powder
  • ½ cup dairy-free milk
  • ¼ teaspoon vanilla
  • 1 dash salt
  • ¼ cup chocolate chips + more to top

Instructions
 

  • In a mug, add the banana and mash it with a fork. Add the oat flour, peanut butter, cacao powder, protein powder, maple, baking powder, vanilla, salt, and milk. Stir until well combined.
  • Add ¼ cup of chocolate chips and mix those into the batter, then add some more on top.
  • Microwave the mug cake on high for 2 minutes and 30 seconds. Top with vegan vanilla ice cream, strawberries, or your toppings of choice and dig in.

Notes

  • Microwave in Bursts: Start with shorter intervals, checking doneness with a toothpick, as microwaves vary.
  • Grease the Mug: Lightly grease your mug to prevent sticking and make cleanup easier.
