Two of my favorite things are cinnamon rolls and things that are chocolate and peanut butter flavored. This chocolate cinnamon rolls recipe combines the two for a delicious vegan recipe that is perfect for one! It bakes in 15 minutes and makes for a great dessert when all you are in the mood for is a single delicious cinnamon roll and don't feel like making a whole batch or spending hours in the kitchen.
What you will need to make this recipe
Dough Ingredients
- flour: all purpose flour works best. If you need to make this recipe gluten free, you can use a 1:1 gluten free baking flour that is specific for baking, like this one by Bob's Red Mill.
- baking powder
- sugar: I used coconut sugar. You can use any granulated sugar.
- dash of salt
- dairy free milk: any dairy free milk will work
- melted coconut oil
- vanilla
Filling Ingredients
- melted coconut oil
- peanut butter: use the creamy natural kind of peanut butter. This will spread more easily.
- coconut sugar: or any other granulated sugar of choice.
- cinnamon
- mini chocolate chips
Frosting Ingredients
- melted chocolate: I used vegan dark chocolate. Here are some brands I like: Endangered Species and Beyond Good.
- creamy peanut butter: again, use natural peanut butter because it is runny and blends really well with the melted chocolate to create a beautiful swirl.
How to make the chocolate cinnamon roll
To a bowl, combine the flour, baking powder, sugar, salt, milk, oil, and vanilla. Mix them well.
Place a small amount of flour on a large cutting board and spread the flour around. Using a rolling pin, roll out the dough. Try to roll out the dough in a long rectangular shape.
Coat the rolled out dough with some coconut oil and a layer of evenly spread peanut butter. Then sprinkle on the sugar, cinnamon, and chocolate chips.
Roll up the dough into the shape of your cinnamon roll.
Place the roll in an oven safe dish. I baked mine in a small ramekin.
Bake the roll for about 15 minutes at 350F/ 175C.
While the cinnamon roll is baking, create the frosting. Melt the chocolate in the microwave and combine it with the peanut butter.
Once the roll is done baking and has cooled off, top it with the chocolate peanut butter frosting and dig in😋
