I have recently been discovering just how delicious the flavor combination of blueberry and lemon is, and it is becoming a favorite of mine! Instead of going with a plain and boring blueberry oatmeal recipe, I decided to infuse the blueberry lemon flavor into my newest obsession of baked oats. And that's how these blueberry lemon baked oats were born!

oatmeal in a bowl with blueberries

    What you will need

    • 1 banana
    • 1 cup oats
    • 2 tablespoon cashew butter
    • 2 tablespoon maple syrup
    • juice of ½ lemon
    • zest of ½ lemon
    • ½ cup dairy free yogurt
    • ½ cup dairy free milk
    • ½ teaspoon baking powder
    • 2 teaspoon vanilla
    • dash of salt
    • ½ cup blueberries (fresh of frozen)
spoon digging into a bowl of blueberry oatmeal

How to make the blueberry oatmeal

    • To a blender, combine the banana, oats, cashew butter, maple syrup, lemon juice and zest, yogurt, milk, baking powder, vanilla and salt. Blend everything until you get a liquid batter.
    • Fold in the blueberries (but do not blend those!).
    • Split the oats batter between two oven safe bowls.
    • Bake for 30 minutes at 350*F (or less if you prefer the oats to be more runny).
    • This makes two batches.
