I have recently been discovering just how delicious the flavor combination of blueberry and lemon is, and it is becoming a favorite of mine! Instead of going with a plain and boring blueberry oatmeal recipe, I decided to infuse the blueberry lemon flavor into my newest obsession of baked oats. And that's how these blueberry lemon baked oats were born!
What you will need
- 1 banana
- 1 cup oats
- 2 tablespoon cashew butter
- 2 tablespoon maple syrup
- juice of ½ lemon
- zest of ½ lemon
- ½ cup dairy free yogurt
- ½ cup dairy free milk
- ½ teaspoon baking powder
- 2 teaspoon vanilla
- dash of salt
- ½ cup blueberries (fresh of frozen)
How to make the blueberry oatmeal
- To a blender, combine the banana, oats, cashew butter, maple syrup, lemon juice and zest, yogurt, milk, baking powder, vanilla and salt. Blend everything until you get a liquid batter.
- Fold in the blueberries (but do not blend those!).
- Split the oats batter between two oven safe bowls.
- Bake for 30 minutes at 350*F (or less if you prefer the oats to be more runny).
- This makes two batches.
