- Experiment with other fruits. You can definitely make pop tarts with a strawberry filling or other type of berry. I'd use the same process but skip the cinnamon.
- Skip the homemade filling. Use vegan apple butter or other fruit jam instead! This does tend to make a thinner and sweeter pop tart.
- Gluten-free pop tarts. Swap the flour with a 1-to-1 gluten-free flour blend. The brand King Arthur has the best 1-to-1 blend in my opinion.
- Dough time-saving tip. If you don't have time or don't want to mess with the homemade you can also use a vegan puff pastry or vegan pie dough instead. These are often available in the grocery store in the refrigerator or freezer section.
How to Make Vegan Pop Tarts
Let's get started with how to make vegan pop tarts! There are a few different components involved and takes a bit of time but it's not too difficult, I promise!
Step 1: Make the Dough for Homemade Pop Tarts
- Combine the flour, sugar, salt, and cubed butter in a large bowl. Use your hands to break up the butter clumps and mix with the dry ingredients.
- Add the cold water and mix it into the butter and flour mixture until it forms a dough. Refrigerate the dough ball for at least 45 minutes before rolling it out.
PRO TIP: It's essential that you start with cold butter and use cold water. This will help produce a flakier crust for your pop tarts.
Step 2: Make the Filling
- Cook the diced apples with the butter, brown sugar, cinnamon, vanilla, and salt. Cook until the apples have softened, stirring occasionally.
- Use an immersion blender to blend the filling.
- Add the cornstarch and cook the filling until it thickens.
Step 3: Roll Out and Fill Pop Tarts
- Roll out the pop tart dough on a clean, lightly floured surface using a rolling pin. Cut the dough into 5 by 7-inch rectangles using a knife, pizza cutter, or pastry cutter. The goal is 16 rectangles so you will be making 8 pop tarts.
- Place eight of the rectangles of dough on a lined baking sheet and place a dollop of the filling in the center of the square.
- Place the second rectangle of dough on top and seal the pop tart with a fork around the edges.
- Poke three small air holes on the top of each pop tart using a fork. Lightly brush maple syrup on the tops of the pop tarts. This will work as a vegan egg wash to help the pop tarts brown a bit on top while cooking. Bake the pop tarts until they're cooked.
Step 4: Make the Frosting
- Whisk together the frosting ingredients until they're combined.
- Spread on top of your fully cooled pop tarts and sprinkle with a little extra cinnamon on top.

- Fully Cooled Pop Tarts. Make sure your pop tarts are fully cooled before you add the frosting. Otherwise, the frosting will melt right off.
- Chill Your Dough. This gives the dough time to rest but also the butter will warm up while you are working with it so giving it time to chill allows the butter to firm up again. This not only makes it easier to work with, but it also makes sure your dough bakes up flakier.
- Enjoy Immediately. I find these always taste best on the first day but if you have leftovers store them in a single layer in the fridge for up to three days.

Yes, you can freeze unfrosted vegan pop tarts. Store them in an airtight container or bag in the freezer for up to three months. Thaw them out on the counter and then add your frosting and enjoy! I don't recommend freezing them if frosted as the vegan cream cheese doesn't usually freeze well.
Typically an egg wash is brushed over the top of the pastry to help it brown. Since this recipe is vegan it won't brown the same way. Adding the maple syrup on top helps but they likely won't get as browned on top but they will still taste amazing!
If you prefer to enjoy it warm you can heat up the desired amount in an oven, air fryer, or toaster oven. Just make sure to store them without the frosting if you plan to warm up. You can add the frosting to your warm pop tart but it will likely melt a bit and could slide off. Another option is to serve the frosting on the side as a sweet dip!
