    What you will need

    • 2 ripe bananas
    • ¾ cup oats
    • ¼ cup oat flour (or other flour of choice)
    • 1 flax egg (1 tablespoon ground flax + 3 tablespoon water)
    • ¼ cup almond butter / peanut butter
    • ¼ cup maple syrup
    • ¼ cup dairy free milk
    • ½ teaspoon baking powder
    • ½ teaspoon vanilla
    • ¼ teaspoon cinnamon
    • dash of salt
    • ¾ cup blueberries (fresh or frozen)
    • almond slices to top (optional)
    two bananas
    oats in a measuring cup
    flour in a measuring cup
flax egg in a measuring cup
almond butter in a measuring cup
maple syrup in a measuring cup
    milk in a measuring cup
baking powder in a measuring cup
    vanilla in a measuring spoon
    cinnamon in a measuring spoon
    adding salt to a bowl
frozen blueberries in a measuring cup

This recipe makes 8 muffins. Since I only cook for myself and like to have one for everyday of the week (plus an extra, just incase), this is perfect for me. However, if you are making these for a larger family or for you and another friend and would like to make a larger batch, you can double it.

How to make your vegan banana blueberry muffins

    • Preheat the oven to 350F/ 175C.
    • Start by making the flax egg- combine the ground flax with water and set aside for about five minutes.
    • Then, in a large bowl, mash the bananas.
