Deliciously thick and creamy, this Pistachio Chia Pudding is the best kind of make-ahead snack or dessert. Naturally protein-packed and sweetened with only maple syrup, it’s a recipe perfect for busy days, but elegant enough for special occasions.

Having enjoyed my share of pistachio pudding recipes, I’ve yet to find one I don’t totally love. And this chia pudding variation fits right into the indulgence. Totally creamy and ultra-rich, it has a smooth texture thanks to the blending that most chia puddings don’t have. I do this with chocolate protein chia pudding sometimes, too.
This pistachio chia pudding recipe has minimal prep time, and it’s almost as indulgent as my vegan pistachio ice cream.

- Coconut milk: Full-fat coconut milk will bring out a richer taste and texture, which is why I use it in my coconut chia pudding. Other dairy-free milks can work, but the texture will be thinner.
- Pistachios: Save yourself the effort and purchase pre-shelled pistachios. It’s up to you if you prefer raw, dry-roasted, or salted.
- Chia seeds: Both white and black chia seeds will work. Just make sure you’re using the whole seed and not ground chia.

Variations
- Protein powder: If you’re looking for more staying powder, add 2-3 tablespoons of protein powder to the chia mixture. You will need to increase the amount of milk a bit to balance this.
- Chocolate pistachio: Just like the viral chocolate bar, either add cacao powder to the chia pudding mixture, swirl in chocolate chips, or drizzle the pudding by melting a homemade vegan chocolate bar.
- Matcha: This makes a matcha pistachio pudding with a brighter green color and energizing boost, similar to these vegan matcha pancakes.
How to Make Pistachio Chia Pudding
Outside of soaking the pistachios, which is totally optional, the best part about this pistachio chia seed pudding is that it only requires 5 minutes of prep time.

Step 1: Add the ingredients. Add the pistachios to your blender. If possible, use a high-powered blender for the best texture.

Step 2: Add the Remaining Ingredients. Add in the chia seed pudding and coconut milk.

Step 3: Transfer. Pour the mixture into serving cups before placing them in the fridge to chill.

Step 4: Enjoy. Top each serving with your favorites and enjoy! Serve it as a dessert or pair it with a vegan bagel sandwich for a hearty breakfast.
Expert Tips
- Pistachios: If you want the smoothest texture, peel the skin off the pistachios and soak them in boiling water before you blend them.
- Serve or Chill: Most chia pudding recipes are enjoyed after they’ve been chilled for a few hours. However, you can enjoy this recipe as soon as it’s blended if you prefer.
- Wait to Add Toppings: Do not add toppings until you’re ready to enjoy the pudding. Otherwise, they become a bit too soft once stored.

Typically, chia pudding is enjoyed chilled from the fridge. However, you could warm it up in the microwave for a few seconds for a more comforting taste.
You want to chill the chia pudding in the fridge for a minimum of four hours, but most people chill it overnight for the best results.
You can adjust the texture of chia pudding by adding more or less liquid and blending it. I prefer blending it before chilling for the smoothest texture. For a thinner texture, add in some additional milk after blending. If it's too thin, allow it to chill in the refrigerator before serving to allow it time to thicken.
Toppings like coconut whipped cream, fresh berries, and extra nuts taste best on it.

Pistachio Chia Pudding
Ingredients
- 1 can coconut milk 400ml full-fat (you can use a different milk, but the pudding will just be less creamy)
- 1 cup pistachios 150g*
- ¼ cup chia seeds
- ¼ cup maple syrup more or less to taste
- ¼ cup regular dairy-free milk or water
- 1 teaspoon matcha for color
- 1 teaspoon vanilla bean paste or vanilla extract
- pinch salt
Instructions
- Add all of the ingredients to a blender. Blend until smooth and creamy.
- Transfer the pistachio pudding into serving cups.
- Refrigerate for a few hours to give the chia pudding time to set and firm up. Or you can also enjoy right away!
- Top with vegan whipped coconut cream, fresh raspberries, and plenty of crushed pistachios.
Notes
- Milk: You can use other plant-based milks, but only full-fat coconut milk will give the ultra-thick and creamy texture.
- Pistachio prep: If possible, soak the pistachios in boiling water for 30 minutes before you need them; they’ll blend smoother this way.
- Blending: On the off chance that you don’t want to blend the chia pudding and prefer a chewier texture, make sure to stir the pudding twice before you chill it so that the chia seeds don’t sink to the bottom.
