Watermelon popsicles are one of my favorite summer treat to create. They are so delicious and easy to make, made with super easy ingredients, and are just so cute! They are a great summer refreshment and are so much fun to make.

    What you will need

The ingredients for these popsicles are super simple. You will need:

    • watermelon
    • chocolate chips or blueberries
    • coconut yogurt (or any other kind of dairy free yogurt)
    • kiwi

You will also need a blender, freezer, and popsicle molds. However, if you don't have popsicle molds, you can always use a plastic cup to freeze your watermelon popsicles in. Here is a link for the popsicle molds that I used.

The ratios of how much of these ingredients you will need depends on how many popsicles you want to make. I made 12 popsicles and used ½ large watermelon, 2-3 kiwis, and about ½ cup yogurt.

How to make your watermelon popsicles

    • You will start creating your popsicles with the first layer, which is the watermelon.
    • To start, cut up half of a watermelon and scoop out the insides.
    • Add the watermelon to a blender.
    • Add the blended up watermelon to your popsicle mold and fill it to about ¾ of the mold.
    • Do this for all of your popsicles.
    • Add chocolate chips or blueberries to resemble watermelon seeds.
    • Next, freeze the popsicles. You can't add the next layer without freezing them, because all of the ingredients will blend together.
    • Once the watermelon layer is frozen, take out the popsicles and add the yogurt layer.
    • This layer should be about ¼ inch thick. Freeze the popsicles again after this.
    • Finally comes the outer layer of the "watermelon". For this, blend up a few kiwis in a blender. Add a layer of blended kiwi to each popsicle until it reaches the top of the mold.
    • Add your popsicle stick and freeze the popsicles one last time.
    • Once they are frozen, you have some delicious and refreshing watermelon popsicles 🙂

    Equipment

    • popsicle molds
    • popsicle sticks
    • blender

    Ingredients

    • watermelon
    • dairy free yogurt
    • chocolate chips
    • kiwi

    Instructions

    • You will start creating your popsicles with the first layer, which is the watermelon. To start, cut up half of a watermelon and scoop out the insides.
    • Then throw them in a blender. Add the blended up watermelon to your popsicle mold and fill it to about ¾ of the mold. Do this for all of your popsicles.
    • Then I like to add chocolate chips to look like watermelon seeds. If you don'y like watermelon and chocolate together, you could also use blueberries to do this. Or, you could leave that part out altogether.
    • Next, you will need to freeze the popsicles. You can't add the next layer without freezing them, because all of the ingredients will blend together.
    • Once the watermelon layer is frozen, take out the popsicles and add the yogurt layer. This layer should be about ¼ inch thick. Freeze the popsicles again after this.
    • Finally comes the outer layer of the "watermelon". For this, blend up a few kiwis in a blender. Then add a layer of blended kiwi to each popsicle until it reaches the top of the mold.
    • Now add your popsicle stick and freeze the popsicles one last time.
    • Once they are frozen, you have some delicious and refreshing watermelon popsicles 🙂
