    Pumpkin Protein Balls

    I love making easy no-bake snacks that I can grab on the go, and in the fall I have to have a fall version! These pumpkin protein balls are super easy to assemble and make for a great snack or breakfast on the go!

    What you will need for the pumpkin protein balls

    • 1 cup oats
    • ⅓ cup shredded coconut
    • ⅓ cup protein powder
    • ½ cup pumpkin puree
    • ¼ cup maple syrup
    • 1 teaspoon vanilla
    • 1 teaspoon cinnamon
    • ¼ teaspoon nutmeg
    • ¼ teaspoon allspice
    • dash of salt
    • ½ cup chocolate chips

    How to make these no-bake bites

    • Combine all of the ingredients (except the chocolate chips) in a large bowl and mix them well.
    • Fold in the chocolate chips last and mix those in with the rest of the ingredients.
    • Form the batter into balls, about 1 inch in diameter.
    • Refrigerate them and enjoy them as snacks all week, or eat right away.

    How to store them?

    These pumpkin protein can be stored at room temperate or in the fridge. They should be stored in an airtight container. I think that they taste better when they've sat in room temperature because the chocolate chips are softer and the bites themselves are chewier. However, they last a lot longer in the fridge. I suggest storing them in the fridge, and taking them out at room temperature for a few minutes before eating them.

    How long they last?

    These bites last about 5-7 days in the fridge. I've stored them for 2-3 days at room temperature, and I have not stored them at room temperature for longer, so I am not sure if they last longer than that.
