These pumpkin protein balls are a delicious no-bake fall recipe that is vegan and gluten free.

- 1 cup oats
- ⅓ cup shredded coconut
- ⅓ cup protein powder
- ½ cup pumpkin puree
- ¼ cup maple syrup
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- ¼ teaspoon nutmeg
- ¼ teaspoon allspice
- dash of salt
- ½ cup chocolate chips
Combine all of the ingredients (except the chocolate chips) in a large bowl and mix them well.
Fold in the chocolate chips last and mix those in with the rest of the ingredients.
Form the batter into balls, about 1 inch in diameter.
Refrigerate them and enjoy them as snacks all week, or eat right away.
