These vegan "Nutella" cookies are so delicious and have a healthy twist. They don't have any Nutella in them, because Nutella isn't vegan, but they contain the two main ingredients that give Nutella its unique flavor- chocolate and hazelnuts. They are so yummy and only take ten minutes to bake- I hope you enjoy them!
Prepping the hazelnuts
The star ingredient in this recipe are hazelnuts. Hazelnuts have such a strong and delicious flavor that tastes amazing in recipes. In order to make this recipe, you will either need to purchase hazelnut butter, or have a food processor in hand with which you can make your own hazelnut butter. But not to worry! Making the hazelnut butter is actually really simple.
All you will need to make the hazelnut butter are the hazelnuts and a relatively good food processor. I have this one from Cuisinart that I really enjoy. Add the hazelnuts to the food processor and turn the food processor on high. Blend until all of the hazelnut have stuck to the sides of the food processor. Then use a spatula to scrape off the sides and pulse them again. Repeat this processor several times (about 5-6 times at least), until you have a runny peanut butter like consistency.

If you can't find hazelnut butter or don't feel like making your own, you can replace the hazelnut butter with another nut butter than you like. However, I highly recommend using the hazelnuts because of how awesome chocolate and hazelnuts taste together. And if you are going for the Nutella flavor- hazelnuts are a must!
What you need to make these vegan Nutella cookies
Cookie Ingredients
- 2 cups (270 grams) hazelnuts
- ½ cup sugar
- ¼ cup cacao
- 2 tablespoon melted dark chocolate
- ⅓ cup flour
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- ¼ teaspoon salt
- 2 tablespoon dairy free milk
Toppings
- melted chocolate
- chopped hazelnuts
How to make the cookies
- The first step is to turn the hazelnuts into hazelnut butter. Start by adding the hazelnuts to a food processor.
- Blend the hazelnuts on high speed for a full minute. Then pause to scrape off the sides. Blend again for another minute and pause again to scrape off the sides. Repeat this process at least 5 or 6 times, until you have a creamy liquid consistency. This is your hazelnut butter.
- Transfer the hazelnut butter into a large bowl. To it, add the sugar, cacao, melted chocolate, flour, baking soda, vanilla, salt and milk.
- Combine the ingredients well and form the dough into balls, about 1 inch in diameter.
- Line the cookies on a baking tray. Gently pat the tops of each cookie to flatten them a bit.
- Bake in the oven for 10 minutes at 350F/ 175C.
- Allow the cookies to cool for at least 30 minutes. Melt some chocolate and dip half of each cookie in the chocolate. Sprinkle with crushed hazelnuts.
- Allow the chocolate to harden and enjoy your delicious chocolate hazelnut cookies!
