    Ube (Purple Sweet Potato) Pie

    I absolutely love incorporating new flavors and beautiful colors into my recipes. A few years ago, I found out about the wonderful vegetable called ube. It originates in east Asia, and has been used in that part of the world for ages. It is so flavorful and just perfect for incorporating into recipes. In my opinion, it tastes much like a sweet potato, but even thicker and creamier. This is why I thought it would make for a great purple sweet potato pie!

    What you will need for your ube pie

    • 2 cups purple potatoes
    • 1 cup coconut cream
    • ¼ maple syrup
    • ½ cup sugar
    • ¼ cup cornstarch
    • 2 teaspoons vanilla
    • 2 teaspoons allspice
    • 2 teaspoons cinnamon
    • 1 teaspoon ginger
    • 1 teaspoon nutmeg
    • ½ teaspoon salt

    How to make your purple sweet potato pie

    • Start by cutting, peeling, and chopping your purple potatoes.
    • Boil them for about 20 minutes, or until they are so soft that you can easily stick a fork in them.
    • Then mash them up and measure out two cups. Now add the two cups of sweet potato to a large bowl and add the rest of the ingredients.
    • Use a hand mixer to combine the ingredients well.
    • Once you have your creamy filling, transfer it to your pie crust.
    • Cook the pie for about 45-50 minutes at 350*F and make sure you give it plenty of time to cool!

      Can you use a graham cracker crust?

        The taste would definitely go really well, but the only issue is that graham cracker crusts don't need to be baked, and this pie does need to be baked. So if you could find a graham cracker crust that can be baked, then absolutely! 🙂

      Ok so your saying purple potatoes not purple yams and they are two completely different vegetables. So which one are you using?

        Hi there! Although they can sometimes be called purple potatoes or purple yams when shopping for them, you're right that purple yams is the correct one! To be super exact, I mean ube every time I reference any purple potato or yam in this recipe 🙂
