This vegan chocolate mousse pie is one of my favorite go-to recipes. Whenever I need to make a quick and delicious dessert for a friend’s house party or a family event, I often go with this one. It’s got few ingredients that are all plant based, and takes less than ten minutes to prep.
For this recipe, you’re going to need half of a block of tofu, creamy peanut butter, maple syrup, chocolate almond milk, dark chocolate, a pinch of salt, and a pie crust.
If you don’t have chocolate almond milk, regular almond or other plant milk will work as well. This just adds more chocolatey flavor.
*Note: the amount of maple syrup you need can very depending on the kind of milk and chocolate you use. For example, if you use unsweetened almond milk and 100% dark chocolate, you will need to add more sweetener because neither of those contain sugar. If you use chocolate almond milk and an already sweetened chocolate, you’ll need less. It’s best if you taste the pie filling once you make it to decide how much maple syrup you should add.
You can use any kind of pie crust- a graham cracker crust or a frozen pie crust. If you use a graham cracker pie crust, you won’t need to do anything to it, just pour the pie filling. If you use a frozen pie crust, bake it at 350 degrees Fahrenheit until the edges start to get golden- about 10-15 minutes.
Preparing your chocolate pie:
To prepare the pie, you will need a high speed blender. Break up your tofu in smaller pieces- you can just use your hands. Throw the tofu in the blender. Add the creamy peanut butter, maple syrup, chocolate almond milk, and a dash of salt.
Melt your dark chocolate. You can easily do this in the microwave. Break it apart in small pieces and heat it for 30 second increments, until it is fully melted.
Add the melted dark chocolate to the rest of the ingredients and blend until all of the ingredients have formed a thick, smooth chocolate filling. Taste it to see if you want to add any more sweetener.
Pour your pie filling to the pie crust. Refrigerate for several hours.
Top your vegan chocolate mousse pie with vegan whipped cream, chocolate shavings, raspberries, or whatever you’d like!
The Best Vegan Chocolate Mousse Pie
- 7 oz soft tofu this is about half of the block
- 1/2 cup creamy peanut butter
- 1/2 cup maple syrup
- 1/4 cup chocolate almond milk
- 1 bar of dark chocolate
- 1 dash of salt
- pie crust
- Melting the chocolate either in the microwave or the stovetop.
- Combine all of your ingredients (tofu, chocolate, peanut butter, maple syrup, milk, salt) in a high speed blender until you get a smooth creamy consistency. This is your pie filling.
- Pour your pie filling into the crust and refrigerate for 4-5 hours.
- Vegan whipped cream makes for a great topping of this pie. I also added some chocolate shavings.
