When I was young, Rice Krispy bars were one of my favorite desserts to pack for lunch. I love how crunchy and sweet they are, and I was craving an adult version of them. Rice Krispy bars aren't the most nutritious, so I wanted to make a healthier alternative. That's what inspired me to make these delicious vegan and gluten free peanut butter chocolate crunch bars.

What you need to make these peanut butter chocolate crunch bars
- peanut butter (I like to use the natural one without added oils and sugar. It is cleaner in ingredients and binds easier with the rice cereal)
- maple syrup (you can also use honey if you prefer)
- rice cereal- rice cereal can be found in the cereal section of most grocery stores. I bought mine at Whole Foods. Here is a link for the brand that I purchased.
- dark chocolate
- coconut oil
- salt (normal table salt, and the flakey kind)
- cinnamon
- vanilla
How to make them
- In a large bowl, combine the peanut butter and maple syrup.
- Microwave them so they soften and combine easier with the rice cereal.
- Add the salt, cinnamon, and vanilla.
- Then add 3 cups of rice cereal to the mixture.
- Combine well and transfer to a pan.
- Set aside.
- In a new bowl, break apart your chocolate and add the coconut oil.
- Microwave until the chocolate melts.
- Now spread the chocolate over the rice crispy bar.
- Refrigerate the bars until the chocolate hardens.
- Cut them up, sprinkle some flakey salt and enjoy.

Great recipe…can also use other grains such as kamut to change this up. Also, oil is completely unnecessary…easy to go without it.

I haven't tried it with another grain but I don't see why not! And the oil is so that the chocolate crust is softer because if you just make it with melted chocolate, it's really hard to bite into 🙂
