    This Vegan Mango Ice Cream is made with just four simple ingredients and comes together in five minutes. There's no need for an ice cream maker or churning. As long as your mango is frozen and ready to go, this is the creamiest, most refreshing frozen dessert you'll pull together all summer.

    If you've been around here for a while, you know I have a serious thing for vegan frozen desserts. From my watermelon sorbet to my coconut sorbet, I'm always looking for ways to make a creamy, satisfying treat without any dairy, and this vegan mango ice cream might just be my new favorite.

    What I love most about this one is how effortless it is. You blend it, you eat it. That's really it. No ice cream maker, no refreezing, no waiting around. The frozen mango does all the heavy lifting, and a scoop of coconut cream brings that rich, creamy texture that makes it feel indulgent without actually being complicated.

    Whether you're fully plant-based or just looking for a lighter, dairy-free dessert to cool down with, this one is going to be on repeat at your place all season.

    Ingredients

    • Mangoes: Fresh or frozen, both work here. If using fresh, you'll want two large, ripe mangoes. Look for ones that give slightly when squeezed and smell fragrant near the stem. Slice the flesh away from the pit, then freeze for at least 6 hours (overnight is easiest) before blending. If you're using store-bought frozen mango, you're mostly there, so you can just measure and make your ice cream.
    • Coconut Cream: This is what makes the ice cream rich and creamy rather than icy. To get coconut cream, refrigerate a full-fat canned coconut milk overnight. The thick, solid layer that forms at the top is your coconut cream. Scoop out just that solid part and leave the watery liquid behind. Make sure you're using full-fat, not light as it won't give you the same creamy texture.
    • Sweetener: Just a tablespoon to round out the sweetness. Maple syrup adds a subtle warmth, while agave keeps the flavor a little more neutral and lets the mango shine. Either works beautifully, and if your mangoes are especially ripe and sweet, you may find you don't need the full tablespoon.
    • Fresh Lemon Juice: Just a splash, but don't skip it. A small amount of lemon juice brightens the mango flavor and keeps the color vibrant. It won't make your ice cream taste lemony, it just makes it taste more like mango.

    Variations

    • Serving in mango skin cups: This is my top reason for using fresh mango. Scoop the flesh out of the skin to form a natural bowl. Freeze the shell along with freezing the mango. When ready to serve, scoop the ice cream into the skin. It's zero waste and photo-worthy! I also use this same serving idea in my lime sorbet recipe.
    • Tropical twist: Add a few chunks of frozen pineapple to the blender.
    • Spicy mango: Add a pinch of chili powder before blending or serve with Tajin on top.
    • Protein boost: Add a scoop of vanilla vegan protein powder, like in my mango protein smoothie.
    • Lime instead of lemon: Lime gives a slightly more tropical, citrus-forward flavor.

    How to Make Mango Ice Cream

    Step 1: Slice and freeze. Cut the mango and scoop it from the skin. Place the mango in the freezer for at least 6 hours or overnight. The mango needs to be fully frozen solid before blending, or it won't reach soft-serve consistency. You can skip this step if using frozen mango.

    Step 2: Make mango cups. Scoop any remaining flesh to shape the mango skin into a cup. Store in the freezer until you're ready to serve. This step is optional but it makes for an eye-catching dessert.

    Step 3: Blend. Add the frozen mango to your high-speed blender along with the other ingredients. Blend until the mixture looks like soft-serve ice cream.

    Step 4: Serve. Scoop the vegan ice cream into your mango cups, a bowl, or a cone. Add some vegan granola for a crunchy element. Enjoy!

    Expert Tips

    • Use the right equipment. A high-speed blender like a Vitamix or Blendtec will give you the creamiest result. A food processor works well, too just plan on scraping down the sides a few times. A standard blender can get the job done if you break the frozen mango into smaller pieces before adding it.
    • Freeze mango in a single layer. Spread the mango pieces out on a baking sheet lined with parchment paper before transferring to a freezer bag. This speeds up the freezing and keeps them from clumping together which makes blending easier.
    • Don't over-blend. Stop as soon as the mixture is smooth and creamy. Every extra few seconds generates heat and nudges it closer to a smoothie. For best results, blend, check, and stop.
    • Taste before you serve. Mango sweetness can vary whether you're using fresh or frozen, so give it a quick taste before serving and add a touch more maple syrup or agave if it needs a little extra sweetness.
    • Full-fat coconut cream only. Light coconut milk has too much water and will give you an icy, thin result instead of creamy. Stick with full-fat and scoop only the solid part from the top of the can.
    • Storage. Transfer any leftovers to a freezer-safe airtight container and store for up to one week. Press a sheet of plastic wrap directly onto the surface before sealing to prevent ice crystals from forming on top. When you're ready to serve from frozen, let it sit on the counter for 10–15 minutes to soften, or toss it back in the blender briefly to bring it back to soft-serve consistency.

    Sure, it's really best eaten straight from the blender, but it absolutely works as a make-ahead dessert. Just re-blend it before serving to get that fresh, creamy texture back.


    Do I need an ice cream maker for this vegan mango ice cream recipe?

    Nope! This recipe is completely no-churn. All you need is a blender or food processor.

    What type of mango works best to make mango vegan ice cream?

    Ataulfo (also called honey mangoes) are naturally sweeter and creamier when frozen, making them ideal for this recipe. Tommy Atkins, the large red-green variety you'll find at most grocery stores, works well too, just expect a slightly less sweet result. Store-bought frozen mango is a great option year-round and totally reliable for this recipe.

    Can I use coconut milk instead of coconut cream in my creamy mango ice cream?


    No, they won't have the same results. Coconut cream is the thick, fatty layer that separates from full-fat coconut milk when it's chilled. Using just that solid part gives you a richer, creamier texture. Coconut milk contains too much water, which leads to an icy final result instead of a creamy one.

    Ingredients
     
     

    • 2 large mangoes
    • ¼ cup coconut cream Note: to get coconut cream, refrigerate a can of full-fat coconut milk overnight and scoop out only the solid part that forms at the top.
    • 1 tablespoon maple syrup or agave
    • 1 splash fresh lemon juice

    Instructions
     

    • Slice the mango and freeze it for 6+ hours OR use store-bought frozen mango.
    • If you are using a fresh mango, scoop out the mango skin to form a cup. Freeze the mango skin cup while also freezing the mango flesh.
    • To a blender, add the frozen mango, coconut cream, maple, and lemon juice and blend until super creamy and smooth.
