Step 5: Roll and Add Filling. Use a rolling pin to roll out the dough on a clean surface sprinkled with flour into a rectangular shape (about 15 x 12 inches long). Spread the filling on top.

- Nail the milk temperature. Too cold and the yeast won't activate, and if it's above 115°F, you'll kill it. Aim for 105–110°F. It should feel warm on your wrist, like bath water. When in doubt, use a kitchen thermometer.
- Squeeze the moisture out of your pumpkin. Canned pumpkin holds a lot of water. For both the filling and frosting, press your pumpkin firmly into a few layers of paper towels or cheesecloth until no liquid pools underneath. This keeps your filling gooey (not soggy) and your frosting thick.
