These millionaire shortbread bars are a healthier, vegan, and gluten free version of the traditional bars. They have three layers- a rich coconut crust, a date and peanut butter based caramel filling, and a thick dark chocolate top. I can't get enough of them every time I make them, and I hope you enjoy these little desserts as much as I do!
