These millionaire shortbread bars are a healthier, vegan, and gluten free version of the traditional bars. They have three layers- a rich coconut crust, a date and peanut butter based caramel filling, and a thick dark chocolate top. I can’t get enough of them every time I make them, and I hope you enjoy these little desserts as much as I do!

What you will need
Crust Ingredients
- 1 cup coconut flour
- 1/2 cup maple syrup
- 1/4 cup coconut oil
- 1/4 tsp vanilla
- dash of salt





Caramel Filling Ingredients
- 1 1/2 cup dates
- 1/4 cup nut butter
- 2 tbsp dairy free milk
- 1/4 tsp vanilla
- 1/4 tsp salt





Chocolate Topping Ingredients
1/2 cup melted dark chocolate
3 tbsp coconut oil


How to make the millionaire shortbread bars
Crust Directions
- In a large bowl, combine the coconut flour, maple syrup, coconut oil (make sure it is melted and liquid when you add it in. Microwave it for 30-40 seconds if it is not).
- Also add the vanilla and salt.
- Mix well, then add the crust to your pan.
- Use your hands to spread evenly.

Caramel Filling Directions
- Add all of the caramel filling ingredients to a food processor. *Make sure that you either soak the dates in water overnight, or soak them in hot water for 20-30 minutes prior to using. This will ensure that they are soft and easy to blend.
- Blend all of your ingredients together in the food processor.
- Then spread the caramel layer evenly on top of the crust.

Chocolate Topping Directions
- To a bowl, add the melted chocolate and coconut oil.
- Mix them together and pour on top of the caramel filling.
- Refrigerate until the chocolate hardens, cut up your bars and enjoy!
