One of the most popular recipes I have ever shared was for vegan buffalo cauliflower – it got over 5.6 million views on my Tik Tok! So many people liked the recipes, but many had commented asking me for a gluten-free version / a version made with almond flour. I finally created one that's perfect for anyone with a gluten sensitivity. And I actually think that this recipe tastes even better than the original because of the amazing nutty flavor that the almond flour adds!

What you will need to make this recipe

    • head of cauliflower
    • blanched almond flour: blanched means that the skin from the almonds has been removed. I find that blanched works better than non-blanched almond flour at binding with the other ingredients to create a good batter for the bites.
    • cornstarch
    • garlic powder
    • smoked paprika: you can use regular paprika instead of smoked, but the smoked adds a nice flavor.
    • salt
    • pepper
    • dairy free milk: any dairy free milk will work.
    • buffalo sauce: most buffalo sauces are vegan. Here are a few that are vegan and also have simple ingredients: Frank's Red Hot, Primal Kitchen, Sweet Baby Ray's.
    • optional: vegan ranch to dip the bites in.

How to make the vegan buffalo cauliflower

To a large bowl, combine the almond flour, corn starch, garlic powder, paprika, salt, pepper, and milk. Combine them well.

Wash the head of cauliflower and cut it up into smaller pieces. Then dip each piece into the batter until it is fully coated in it. Then line the pieces on a baking tray.

Line the baking tray with parchment paper instead of foil – it makes the pieces way less likely to stick.

Bake the buffalo cauliflower bites for 20 minutes at 450F/ 230C. Then take them out and let them cool off for a few minutes.

Pour some buffalo sauce into a new bowl, and dip each piece of cauliflower into the bowl until it is fully covered in buffalo sauce.

Put the cauliflower back on the baking tray and bake for another 20 minutes.

Dip the cauliflower bites into some vegan ranch and enjoy!
