    Texas Caviar

    This Texas caviar recipe is healthy, so easy to make, and is packed with veggies and protein. It is great to eat as a salad, or makes for the perfect dip for your favorite chips! You might also know it as cowboy caviar, or cowboy salad. I love meal prepping it and enjoying it for lunch or a snack, or making a large batch with some chips to enjoy as an appetizer snack at a get together with friends. Let's get to making some delicious Texas caviar!

    What is Texas caviar

    Texas caviar is a recipe typically made with black eyed peas, beans, corn, tomatoes, peppers, onions, and cilantro. There are so many variations of it and people also add jalapeños, green chiles, and add different kinds of dressings of their choice. In my version, I decided to add avocado, use bell peppers, and create my own really easy dressing. I also left out the black eyes peas because I didn't happen to find any. It turned out so delicious and it was a hit with my roommates!

    What you will need

    • 1 can black beans
    • 1 can corn
    • 1 cup chopped cherry tomatoes
    • 1 red pepper
    • 1 orange pepper
    • ½ red onion
    • 1 avocado
    • juice of 1 lime
    • ¼ cup olive oil
    • 1 teaspoon cumin
    • 1 teaspoon chili powder
    • salt & pepper to taste
    • cilantro

    How to make it

    • In a large bowl, mix the beans, corn, cherry tomatoes, peppers, onion, and avocado and combine them well.
    • Add the olive oil, lime juice, cumin, chili powder, and salt and pepper.
    • Finally, top with some cilantro, if you like it!

    Ingredients
      

    • 1 can black beans

    Instructions
     

    • In a large bowl, mix the beans, corn, cherry tomatoes, peppers, onion, and avocado and combine them well.
    • Then add the olive oil, lime juice, cumin, chili powder, and salt and pepper.
    • Finally, add some cilantro and enjoy!
