I love taking traditional recipes and making them vegan. Fortunately, there are so many amazing vegan alternatives nowadays, so this is actually super easy to do. In this really simple recipe, I made a vegan breakfast bagel with vegan versions of bacon, egg, and cheese.

What you will need to make the vegan breakfast bagel

Sandwich Ingredients

  • 1 bagel
  • 1/2 avocado
  • vegan bacon
  • vegan egg (Just Egg)
  • vegan cheese slices

*Note: Just Egg is a vegan egg alternative that tastes and cooks like an egg, but is made with beans. It comes in a bottle and can be purchased from most grocery stores. Side Ingredients

  • spinach
  • mushrooms
  • garlic powder
  • onion powder
  • olive oil
  • salt & pepper to taste

How to assemble the bagel

  • Toast the bagel.
  • Cook the veggie bacon according to the package instructions.
  • Add the vegan egg to a pan and cook for several minutes. Then flip and cook on the other side.
  • To assemble the bagel, slice the avocado and add the slices to the bagel.
  • Top with the vegan egg, vegan cheese, and veggie bacon. Close the bagel and slice it into two.

Spinach and Mushrooms Side

  • To create the spinach and mushroom side, add olive oil to a pan. Add the spinach and mushrooms. Then add garlic powder, onion powder, salt and pepper.
  • Cook the spinach and mushrooms for several minutes until the spinach wilts and darkens in color and the mushrooms have softened.
  • Add the spinach and mushrooms on the side.
  • Enjoy your breakfast!
