
Pistachio Chocolate Cups
These crunchy and delicious pistachio cups are like a mini Dubai chocolate bar to grab on the go, and are a fun twist on a classic peanut butter cup🥰
Ingredients

- 1 cup kataifi pastry* Normally you have to finely chop and roast the kataifi pastry. However, the version I purchased on Amazon already came toasted, which is why I don't do it in my version!
- ¾ cup pistachio cream
- ¼ teaspoon matcha optional, for color
- 2 bars of dark chocolate about 360g
Topping
- crushed pistachios
- flakey salt
Instructions
- Melt the chocolate. Then line a muffin pan with cupcake liners. Add a large spoonful of melted chocolate to each cup. Use the back of a spoon to spread some of the chocolate on the sides of the cups. Refrigerate until the chocolate hardens.
- In a bowl, mix together the kataifi, pistachio cream, and matcha.
- To each cup of hardened chocolate, add a large dollop of the pistachio kataifi and press it down to create an even layer.
- Add a dollop of melted chocolate until you cover all of the pistachio kataifi. Refrigerate until the chocolate hardens.
- You will make about 12 cups with this recipe.
- Once the chocolate has hardened, top with crushed pistachios and flaky salt and enjoy!
