I love being inspired by my favorite foods to create new recipes. For example, I love peanut butter and jelly sandwiches AND I love peanut butter cookies. So for this recipe, I combined them into peanut butter and jelly sandwich cookies! They did not disappoint.
To first thing you need to do is make the peanut butter cookies. This peanut butter cookie recipe is super easy and is one of my all time favorite recipes to make. I've even made a blog post about it before, because I love them so much. You can check it out here, but I will go ahead and also detail in this post how I make them.
What you will need:
The ingredients you will need for this recipe are: natural peanut butter, oat flour, stevia, coconut sugar, dairy free milk, baking soda, a dash of salt and strawberry jelly or jam.
I used specific ingredients because I wanted to make this recipe as healthy as I could.
For example, I used natural peanut butter instead of peanut butter that has sugar and oil added. I also used oat flour to make these gluten free.
To keep the sugar low in this recipe, I used a mix of both coconut sugar and stevia. If you've never used stevia, it is a zero calorie sweetener and does not raise your blood sugar levels. Keep in mind that it is actually sweeter in taste than sugar in the same proportions, so when replacing it, you don't want to just swap stevia for the same amount of sugar.
The last ingredient that's vital for putting your peanut butter and jelly sandwich cookies is, of course, the jelly. In this recipe I used a brand called Crofters, since they don't use high fructose corn syrup. I also have a recipe for homemade raspberry chia jam that would taste delicious in these cookies. Putting together your peanut butter and jelly sandwich cookies:
Now you have all of the ingredients and it's time to make the cookies.
Start by combining all of the ingredients in a large bowl- the peanut butter, coconut sugar, stevia, oat flour, plant milk, baking soda, and salt. Mix well until you get a thick cookie dough.
Form the dough into balls about 1 inch in diameter and place them on a cookie sheet lined with parchment paper or aluminum foil.
Using a fork, lightly press down on the cookies in an X shape, until you get the checkered board look that you see in the photos. Check photo below.
Bake the cookies for ten minutes at 350 degrees Fahrenheit.
When they are done, place the cookies on a cooling rack for 15 minutes.
After the cookies have cooled, add a jelly on top of half of the cookies.
Place a cookie without jelly on top of a cookie with jelly and you have your peanut butter and jelly sandwich cookies. Enjoy!

Healthy Peanut Butter and Jelly Sandwich Cookies
Ingredients
- 1 cup natural peanut butter
- ¾ cup oat flour
- ¼ cup stevia
- ½ cup coconut sugar
- ¼ cup plant milk
- 1 teaspoon baking soda
- ¼ teaspoon sea salt
- strawberry jelly or jam
Instructions
- In a large bowl, combine the peanut butter, coconut sugar, stevia, oat flour, plant milk, baking soda, and salt.
- Mix well until you get a thick cookie dough.
- Form the dough into about balls (about 1 inch in diameter).
- Using a fork, lightly press down on the cookies in an X shape, until you get the checkered board look that you see in the photos.
- Bake the cookies for ten minutes at 350 degrees Fahrenheit.
- Place the cookies on a cooling rack for 15 minutes.
- After the cookies have cooled, add a jelly on top of half of the cookies.
