Happy February everyone! February tends to be a slow and cold month here in the Midwest, with not many exciting things going on. However, one fun holiday that always gets me excited is Valentine's Day! I don't really care for it as a romantic holiday, but I sure love all of the fun heart-shaped festive recipes! I made these delicious and fun Valentine's Day heart pancakes for the occasion, and I hope you enjoy them and make them for someone you love, or even for yourself!
What you will need
- 1 cup flour
- 1 tablespoon baking powder
- 1 tablespoon sugar
- 1 cup dairy free milk
- 1 tablespoon coconut oil
- 1 teaspoon vanilla
- strawberries and maple syrup to top
You will also need a large heart shaped cookie cutter, and a small one to cut out the strawberries. I bought mine as a set on Amazon, and I will link the one I purchased here. However, if you do not heart shaped cutouts, not to worry! You can cook the pancakes, and then just cut them out into heart shapes afterwards 🙂
How to create your Valentine's Day heart pancakes
- Start by adding all of the pancake ingredients to a large bowl and combining them well.
- Then oil the pan with some coconut oil and place the cookie cutter on top.
- Add a few tablespoons of batter inside of the cookie cutter. Use a spoon to spread the batter evenly, so you get an evenly flat pancake.
- Cook for 3-5 minutes, then lift and remove the cookie cutter gently.
- Flip the pancake and finish cooking it on the other side. Repeat this with all of the pancakes.
- I topped mine with strawberries that I also cut out into hearts, and some maple syrup, of course😋🍓
