Did anyone else grow up smearing strawberry cream cheese on all of their favorite carbs? I used to always love strawberry cream cheese bagels for lunch when I was little. Strawberry cream cheese is one of those things that I miss and wanted a vegan healthy version of, so I made my own! This recipe is so easy to create and it's so delicious to dip different fruits into as well.
What you will need
- 8 oz firm tofu
- ½ tablespoon coconut oil
- ½ tablespoon apple cider vinegar
- ½ lemon (both juice and zest)
- 1 oz freeze dried strawberries (about 1 bag)
- 1 teaspoon vanilla
- 2 tablespoon sugar
Note: you can find freeze dried strawberries at most grocery stores. I found mine at Whole Foods. This is what they look like, if you've never seen them before. The reason you should use freeze dried instead of fresh strawberries is because the cream cheese will become way too watery with fresh strawberries.
How to create your strawberry cream cheese
- Start by draining your tofu from the extra water using a kitchen towel or paper towel.
- Add the tofu to a food processor, along with the coconut oil, ACV, lemon juice, lemon zest, freeze dried strawberries, vanilla and sugar.
- Blend all of the ingredients until you get a creamy and smooth consistency.
- Refrigerate for several hours.
- Enjoy on a bagel, toast, or with fruit
