Do you ever crave some quick and delicious cookies, but don't want to make a whole batch? This small batch chocolate chip cookies recipe is perfect for 1-2 people. It's also vegan and gluten free and made with nutritious ingredients, but still tastes super yummy!
What you will need
- ¼ cup peanut butter: use the creamy kind of peanut butter that only contains peanuts and salt as the ingredients. The runny consistency of this kind of peanut butter is best for this recipe. I buy a huge tub like this one from Whole Foods because it is affordable for its size and it's great to use in recipes.
- 2 tablespoon almond flour: For this recipe, I used blanched almond flour. This is the almond flour that I used.
- 1 tablespoon oat flour: oat flour is just ground up oats. You can either make your own by grinding up oats in a blender, or you can buy oat flour at pretty much any grocery store. This is a brand I like to use. If you don't have oat or almond flour, you can substitute both for whole wheat or all purpose flour.
- 1 ½ tablespoon coconut sugar: you can also use another kind of granulated sugar like white or brown.
- ⅛ teaspoon baking powder
- 1 teaspoon cornstarch
- dash of salt
- ½ teaspoon vanilla
- 1 tablespoon dairy free milk: any kind of dairy free milk will work. I like soy or oat.
- 2 tablespoon choc chips/chunks: I used dairy free. There are a ton of great brands, here are a few I like: ESC, 365 by Whole Foods, Enjoy Life.
How to make the small batch chocolate chip cookies
To a bowl, add all of the ingredients (except the chocolate chunks). Mix everything well until you have a thick dough. Now fold in the chocolate chips/chunks.
Shape the dough into a ball and place it on a baking sheet. Flatten out the top by using your fingers. Top with more chocolate chips.
Note: you could split the cookie into two smaller cookies or make one large one.
Bake the cookie for 10 minutes at 350F/ 175C.
Optional: Top with flakey salt & dip in some dairy free milk and enjoy!
