    Peach Cobbler (Vegan)

    I love baking with fruit and I think peaches taste especially yummy in recipes. One of my favorite fruity desserts is peach cobbler, so I wanted to make my own vegan version which also has a healthy twist! I made this one with less sugar, but it is just as delicious as the traditional one.

    What you will need to make this peach cobbler

    Cobbler Ingredients

    • 1 cup oat flour
    • ½ cup sugar
    • 2 teaspoon baking powder
    • ¼ teaspoon cinnamon
    • ¼ teaspoon salt
    • ⅔ cup dairy free milk
    • ⅓ cup coconut oil

    Peach Filling

    • 6-8 peaches
    • ¼ cup sugar
    • ½ lemon (both juice and zest)
    • 1 teaspoon vanilla

    How to make the cobbler

    Cobbler Directions

    Create your oat flour by using a blender or food processor to grind up the oats.

    To a large bowl, combine the flour, sugar, baking powder, salt, and cinnamon. Combine the dry ingredients and add in the coconut oil and the dairy free milk. *Note: melt the coconut oil in the microwave before adding so that it's liquid. This makes it easier to mix with the ingredients.

    Grease the pan you will be using with coconut oil.

    Transfer the batter into the bottom of the pan and spread it evenly.

    Peach Filling Directions

    Peel and slice your peaches.

    *Note: It's best to use ripened peaches. If yours are not ripe yet, leave them for a few days to ripen. This isn't absolutely necessary, but your peaches will be much sweeter and softer that way.

    Add the sliced peaches to a large bowl and add in the sugar, lemon juice and zest, and vanilla.

    Transfer the peaches to the pan on top of the batter. Spread them out evenly.

    Bake the cobbler in the oven at 350*F for 40-45 minutes.

    The batter should cook and rise to the top and to create a golden crust around your peaches.

    Once the cobbler has baked and cooled, transfer to a bowl and top with some vanilla ice cream.
