How to Make a Vegan Invisible Apple Cake
Before you get started, preheat your oven to 375°F and line a standard loaf pan with parchment paper.

Step 1: Make the cake batter. Combine the ingredients for the apple cake batter in a large mixing bowl and whisk until smooth.

Step 2: Slice the apples. Wash, peel, and core the apples. Now you can slice them super thin.

Step 3: Add them to the batter. Carefully fold them into the cake batter.

Step 4: Transfer it to the loaf pan. Add the batter to the loaf pan, gently pressing down the apple slices.

Step 5: Top with almonds and bake. Once all of the batter and apples are in the prepared pan, sprinkle the almond slices on top. Bake it for 45-50 minutes uncovered, and then an additional 10 minutes covered with foil to prevent burning.

Step 6: Cool, chill, and garnish. After it fully cools to room temperature, refrigerate it for 2-3 hours. Then, you can top it with powdered sugar and vegan whipped cream, and serve it with a scoop of vegan ice cream.

- Use a mandoline to slice the apples: You’ll need paper-thin apple slices to execute this recipe correctly, so I highly recommend that you use a mandoline for consistency. A very sharp knife will do, but you’ll have to be precise!
- The batter is meant to be thin: When combining the ingredients for the cake batter, you’ll notice that it’s pretty thin; this is normal! With the moisture coming from the apples, it won’t be a thick batter.
- Cool completely before slicing: Allow the apple cake to completely cool before you slice and serve it. Slicing it warm risks it falling apart.
- Whip the cream long enough: If you decide to make vegan whipped cream as a topping, whip it until it forms stiff peaks. This helps it hold its shape when you dollop it onto the cake.
- Storage recommendations: Cover it tightly with plastic wrap and refrigerate it for 3-4 days.

Wet means raw batter, so you should put it back in the oven to finish baking. The center will be soft, but not liquidy once it’s ready.
No, I don’t recommend that you freeze it. Since the center has a custard-like consistency, it tends to become watery once it thaws.
Any firm apple will do great. Honeycrisp is my favorite, but Fuji or Pink Lady apples are great alternatives. Avoid varieties that become mushy or mealy when cooked, like MacIntosh. They’re better enjoyed raw!

Ingredients
- 1 lb apples* I love using honeycrisp but any will work
- 1 cup all-purpose flour
- ⅓ cup sugar
- 1 teaspoon baking powder
- 3 ½ tablespoon cornstarch
- pinch of turmeric optional, for color
- ¼ teaspoon salt
- 1 cup coconut milk (240 ml)
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- ¼ teaspoon nutmeg

- sliced almonds
- powdered sugar
Instructions
- Combine all of the ingredients (except the apples) in a large bowl and set aside.
- Wash, peel, and core the apples. Use a mandolin to slice the apples super thin. Add them to the batter and mix well.
- Transfer the batter to a parchment-lined pan and gently press down to create an even layer.
- Top with plenty of sliced almonds for a crunch. Bake at 375°F for 45-50 minutes. Then add foil on top of the cake (so that the top doesn't burn) and bake for another 10 minutes.
- Important: even when it's done baking, the cake is not done yet! It needs time to set.
- Allow the cake to fully cool at room temperature, then I recommend refrigerating it for 2-3 hours to allow the custard center to fully set.
- Once ready, top with powdered sugar and vegan whipped cream, slice, and enjoy!
Notes
- A mandoline is the easiest way to get the paper-thin apple slices this recipe needs. If using a knife, slice as thinly and evenly as possible.
- Let the invisible apple cake cool completely before slicing. This helps it set properly and makes for clean, neat slices.
- If the center is still wet or liquid, the cake needs more time in the oven. When fully baked, the center should be soft and custardy, not runny.
