    Invisible Apple Cake

Invisible Apple Cake, also known as gâteau invisible aux pommes in France, is one of those desserts that feels a little bit magical. The paper-thin apple slices almost disappear as they bake, creating a tender, moist cake with a dreamy, custardy center. It's completely vegan, but you'd never guess it from the rich texture and cozy flavor.

Powdered sugar added on top of the invisible apple cake.

I love that this egg-free apple custard cake started in France before becoming a viral favorite in Japan. It looks so fancy when you slice into it, but it's honestly easy enough for anyone to make, even if you don't bake very often.

The best part is that it still has that classic custard-like center without any eggs, with sweet apple flavor in every single bite. I like to think of it as an elevated version of this vegan apple cake.

If you're interested in more vegan cake recipes, look no further! This German black forest cake and vegan coconut cake are some of my favorites.

    Why You’ll Love This Recipe

    • It looks like it came from a bakery. Visually, this cake is stunning, especially with the crunchy almonds and dusting of powdered sugar on top. It looks like it was made by a professional baker.
    • It’s make-ahead friendly. This recipe is super easy enough to make in advance, so it’s cooled and ready to serve for a special occasion or event.
    • It has more apple than batter. There is a good amount of fresh apple in this cake, and more of it than cake batter, giving it a signature creamy texture and a strong, sweet apple flavor.

    Ingredients

    • Apples: Honeycrisp is my top choice for this because it’s mildly sweet and firm, so it holds up well while baking. I don’t recommend Granny Smith because they are too tart for this apple cake recipe.
    • Coconut milk: Full-fat adds richness and helps the custard set properly. Go for the canned version over the carton; it will work the best!
    • Cornstarch: Combined with the coconut milk, this does the job that eggs would. It helps with the structure of the cake and binds everything together.
    • Turmeric: I use this for color, but it’s optional. It gives the cake a gorgeous, golden hue, so I highly recommend it if you plan to serve this dessert to guests. I also added it to my vegan lemon bar recipe to enhance the color.

See the recipe card below for exact ingredient amounts, nutritional information, and detailed instructions.

    Variations

    • Pear: For a milder, more delicate flavor profile, try making this cake with pears. Use a firm variety like Anjou or Bosc.
    • Spiced: Give the apple cake a more complex flavor by adding more spices. A pinch of cardamom, clove, or even a chai spice blend would be beautiful!
    • Gluten-free: Swap the flour for your favorite gluten-free blend. It’s a 1:1 trade for all-purpose flour.

How to Make a Vegan Invisible Apple Cake

Before you get started, preheat your oven to 375°F and line a standard loaf pan with parchment paper.

Cake batter in a mixing bowl.

Step 1: Make the cake batter. Combine the ingredients for the apple cake batter in a large mixing bowl and whisk until smooth.

Apples being sliced on a mandolin.

Step 2: Slice the apples. Wash, peel, and core the apples. Now you can slice them super thin.

Sliced apples into the cake batter.

Step 3: Add them to the batter. Carefully fold them into the cake batter.

Apples being layered in a loaf pan.

Step 4: Transfer it to the loaf pan. Add the batter to the loaf pan, gently pressing down the apple slices.

Almond slices added on top of the cake batter.

Step 5: Top with almonds and bake. Once all of the batter and apples are in the prepared pan, sprinkle the almond slices on top. Bake it for 45-50 minutes uncovered, and then an additional 10 minutes covered with foil to prevent burning.

The cooked cake cooling on parchment paper.

Step 6: Cool, chill, and garnish. After it fully cools to room temperature, refrigerate it for 2-3 hours. Then, you can top it with powdered sugar and vegan whipped cream, and serve it with a scoop of vegan ice cream.

    Expert Tips

    • Use a mandoline to slice the apples: You’ll need paper-thin apple slices to execute this recipe correctly, so I highly recommend that you use a mandoline for consistency. A very sharp knife will do, but you’ll have to be precise!
    • The batter is meant to be thin: When combining the ingredients for the cake batter, you’ll notice that it’s pretty thin; this is normal! With the moisture coming from the apples, it won’t be a thick batter.
    • Cool completely before slicing: Allow the apple cake to completely cool before you slice and serve it. Slicing it warm risks it falling apart.
    • Whip the cream long enough: If you decide to make vegan whipped cream as a topping, whip it until it forms stiff peaks. This helps it hold its shape when you dollop it onto the cake.
    • Storage recommendations: Cover it tightly with plastic wrap and refrigerate it for 3-4 days.

    Serving Suggestions

    • Top your slice of cake with a drizzle of vegan caramel sauce or decorate the top with vegan dark chocolate turtles.
    • Serve this cake with a fresh pairing, like a fruit salad or a glass of creamy lemonade. Who says you can’t enjoy it in the summer, too?
    • Go with a hot beverage like a chai latte (made with dairy-free milk) or a classic black coffee and enjoy a thick slice as a sweet breakfast treat.

    Invisible Apple Cake Recipe FAQs

Why is my vegan apple cake wet in the middle?

Wet means raw batter, so you should put it back in the oven to finish baking. The center will be soft, but not liquidy once it’s ready.

Can I freeze this vegan apple loaf cake?

No, I don’t recommend that you freeze it. Since the center has a custard-like consistency, it tends to become watery once it thaws.

What are the best apples for this apple cake recipe?

Any firm apple will do great. Honeycrisp is my favorite, but Fuji or Pink Lady apples are great alternatives. Avoid varieties that become mushy or mealy when cooked, like MacIntosh. They’re better enjoyed raw!

    Ingredients

    • 1 lb apples* I love using honeycrisp but any will work
    • 1 cup all-purpose flour
    • ⅓ cup sugar
    • 1 teaspoon baking powder
    • 3 ½ tablespoon cornstarch
    • pinch of turmeric optional, for color
    • ¼ teaspoon salt
    • 1 cup coconut milk (240 ml)
    • 1 teaspoon vanilla
    • 1 teaspoon cinnamon
    • ¼ teaspoon nutmeg

    Toppings

    • sliced almonds
    • powdered sugar

    Instructions

    • Combine all of the ingredients (except the apples) in a large bowl and set aside.
    • Wash, peel, and core the apples. Use a mandolin to slice the apples super thin. Add them to the batter and mix well.
    • Transfer the batter to a parchment-lined pan and gently press down to create an even layer.
    • Top with plenty of sliced almonds for a crunch. Bake at 375°F for 45-50 minutes. Then add foil on top of the cake (so that the top doesn't burn) and bake for another 10 minutes.
    • Important: even when it's done baking, the cake is not done yet! It needs time to set.
    • Allow the cake to fully cool at room temperature, then I recommend refrigerating it for 2-3 hours to allow the custard center to fully set.
    • Once ready, top with powdered sugar and vegan whipped cream, slice, and enjoy!

    Notes

    • A mandoline is the easiest way to get the paper-thin apple slices this recipe needs. If using a knife, slice as thinly and evenly as possible.
    • Let the invisible apple cake cool completely before slicing. This helps it set properly and makes for clean, neat slices.
    • If the center is still wet or liquid, the cake needs more time in the oven. When fully baked, the center should be soft and custardy, not runny.
