Another trend I hopped on recently is pancake cereal. If you have not yet seen it, it's where people make super tiny pancakes and then eat them like cereal. I had to try it out for myself because it looked so cute. I was not disappointed! I thought it was delicious, and it was so much fun to make. Here is how I made my own vegan pancake cereal.
What you'll need for vegan pancake cereal
In terms of ingredients, you won't need anything crazy and, in fact, the ingredients for pancake cereal are the same as regular pancakes. You can use any kind of pancake batter really, but I used my favorite vegan pancake recipe. Check out the ingredients below:
- 1 cup whole wheat flour
- 1 tbsp baking powder
- 1 tbsp coconut sugar
- 1 tbsp coconut oil
- 1 cup dairy free milk
The only special tool you will need for this vegan pancake cereal is a dispense bottle. I used one that I purchased at Walmart for $0.97, and it was very much worth it. Of course, right now isn't the perfect time to be going out, so if you have no way to get one of these, not to worry. You can also use an old plastic water bottle and cut out a tiny hole in the cap. This will do the job just as well.
Finally, for the toppings, you will need some plant based butter, maple syrup, and dairy free milk. I actually chose not to add the milk, because I thought they looked so delicious as is. The choice is yours!
How to make them:
- Start by making your pancake batter.
- Transfer it to the dispense bottle.
- Grease your pan and start creating little tiny pancakes. The size that you make them is totally up to you. I made mine about 1 inch in diameter, but I have seen people make them as small as Cheerios.
- Cook them for a few minutes on each side. Keep in mind that, because they are so much smaller than regular pancakes, they will cook much faster.
They were so small that I couldn't flip them with any spatula or fork I had, so I flipped mine using my fingers. I definitely recommend AGAINST this, I did burn my fingers just a bit (LOL). If you are going to do this and be lazy like me, however, make sure the heat is on the lowest setting and avoid touching the pan directly. It's actually possible to flip them without touching it.

Equipment
- dispense bottle or old plastic water bottle
Ingredients
- 1 cup whole wheat flour
- 1 tablespoon baking powder
- 1 tablespoon coconut sugar
- 1 tablespoon coconut oil
- 1 cup dairy free milk
Instructions
- Combine your pancake ingredients well and set the batter aside for a few minutes, so the baking powder has time to activate and thicken up the pancakes.
- Transfer your pancake batter to a dispense bottle.
- Grease your pan, and start creating mini pancakes.
- Cook for a few minutes and then flip and cook for a few more on the other.
- Transfer to a bowl and top with vegan butter, maple syrup, and dairy free milk.
