This vegan pinwheel recipe is the perfect lunchtime or snack solution when you're in a rush. It requires absolutely NO cooking and takes just a few minutes to make. The crisp and colorful veggies make each bite so delicious and satisfying.
Generously spread hummus on the tortilla, then start lining up the veggies.
Tightly roll the tortilla, cut it into pieces, then line them on a plate and enjoy!

Use Brightly Colored Veggies. This creates a much more striking look but also provides you with a wide array of nutrients.
Make Sure to Roll Tightly. This ensures your pinwheels will stay together.
Cutting Your Pinwheels. Use a sharp knife and a gentle sawing motion when cutting them to keep them from squishing.
Carry on the Go. These truly are best enjoyed immediately after cutting but I've also taken them with me for lunch on the go. They do soften up a little bit but are still quite tasty. Just be sure to place them tightly together in a container in a single layer.
