Vegan Veggie Pinwheels

This vegan pinwheel recipe is the perfect lunchtime or snack solution when you're in a rush. It requires absolutely NO cooking and takes just a few minutes to make. The crisp and colorful veggies make each bite so delicious and satisfying.

Ingredients
  

  • tortillas
  • hummus
  • red pepper
  • carrot
  • yellow pepper
  • cucumber
  • spinach
  • red cabbage

Instructions
 

  • Start by thinly slicing all of your veggies.
  • Generously spread hummus on the tortilla, then start lining up the veggies.
  • Tightly roll the tortilla, cut it into pieces, then line them on a plate and enjoy!

Notes

  • Use Brightly Colored Veggies. This creates a much more striking look but also provides you with a wide array of nutrients.
  • Make Sure to Roll Tightly. This ensures your pinwheels will stay together.
  • Cutting Your Pinwheels. Use a sharp knife and a gentle sawing motion when cutting them to keep them from squishing.
  • Carry on the Go. These truly are best enjoyed immediately after cutting but I've also taken them with me for lunch on the go. They do soften up a little bit but are still quite tasty. Just be sure to place them tightly together in a container in a single layer.
