This blueberry oatmeal recipe has delicious flavors of blueberry and lemon and is vegan and gluten free too!

  • 2 oven safe bowls

  • 1 banana
  • 1 cup oats
  • 2 tablespoon cashew butter
  • 2 tablespoon maple syrup
  • juice of ½ lemon
  • zest of ½ lemon
  • ½ cup dairy free yogurt
  • ½ cup dairy free milk
  • ½ teaspoon baking powder
  • 2 teaspoon vanilla
  • dash of salt
  • ½ cup blueberries fresh of frozen


  • To a blender, combine the banana, oats, cashew butter, maple syrup, lemon juice and zest, yogurt, milk, baking powder, vanilla and salt. Blend everything until you get a liquid batter.
  • Fold in the blueberries (but do not blend those!).
  • Split the oats batter between two oven safe bowls.
  • Bake for 25 minutes at 350*F (or less if you prefer the oats to be more runny).
