Vegan Pasta Salad Recipe

Vegan Ranch
- 2 cups coconut yogurt any other plant based or regular yogurt works too
- 1 teaspoon agave
- 1 teaspoon apple cider vinegar
- 1 teaspoon coconut oil
- ¼ teaspoon dill
- ½ teaspoon garlic powder
- 1 teaspoon onion powder
- 2 tsps parsley
- 1 teaspoon pepper
- ½ teaspoon salt
Salad Ingredients
- 1 box pasta
- 1 head broccoli
- 2 large carrots
- 1 red bell pepper
- 1 yellow squash
- 3 green onions
- olives as many as you'd like
To make the vegan ranch, add all of the ranch ingredients in a large bowl and mix until you get a creamy well mixed ranch.
Cook the pasta according to the instructions on the box.
Chop all of your veggies- the broccoli, carrots, pepper, squash, and green onions.
In a large bowl, add the pasta, veggies, and ranch and mix well.
Add the olives and any other toppings that you would like!
