Ingredients
  

Oat Ingredients

  • 1 cup oats 80 g
  • 1 cup oat flour ground up oats- 80 g
  • 1 cup pumpkin puree
  • ¼ cup creamy natural peanut butter
  • ½ maple syrup
  • cup dairy-free milk
  • 1 tablespoon ground flax seeds
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • ¼ teaspoon each of nutmeg ginger & allspice
  • 2 teaspoon vanilla extract
  • ½ teaspoon salt
  • ¾ cup chopped pecans

Frosting Ingredients

  • cup vegan cream cheese
  • 2 tablespoon vanilla protein powder
  • 1-2 teaspoon maple syrup optional
  • pinch of salt

Instructions
 

  • In a large bowl, combine the pumpkin puree, peanut butter, maple syrup, milk, flax, baking powder, spices, vanilla, salt, oats, and oat flour. Mix everything well until combined. Then fold in the chopped pecans.
  • Line a baking tray with parchment paper. I used a 9 x 9 inch baking tray.
  • Pour the oat mixture into the baking tray and bake the oats for 25-28 minutes at 350*F.
  • While the oats are baking, whisk together the frosting ingredients.
  • Once the oats have baked and *fully* cooled, spread or pipe on the frosting on top.
  • Slice and enjoy!
