Vegan Zucchini Fritters
zucchini oat flour cornstarch baking powder ground flax seeds nutritional yeast green onions garlic fresh dill olive oil vegan yogurt cucumber lemon juice salt & pepper
Wash and grate the zucchini.
Squeeze out the excess water from the zucchini.
Add the zucchini to a large bowl along with the oat flour, cornstarch, flax, nutritional yeast, onions, garlic, dill, olive oil, baking powder, salt & pepper.
Roll the zucchini mixture into patties and air fry them for 8-10 minutes.
While the fritters are baking, make your tzatziki sauce by combining the ingredients in a bowl.
When the fritters are ready, dip them in the sauce and enjoy!
