Vegan Lemon Cupcakes
Combine all of the ingredients in a large bowl and whisk them together.
Pour the batter into cupcake molds and bake for 18-20 minutes at 350*F.
While the cupcakes are baking, make the lemon buttercream frosting.
Wait for the cupcakes to cool off, then frost them.
Top with a lemon wedge and enjoy!
