Start by making the crust by crushing up the cookies and vegan butter and bake it for 10 minutes.
Combine all of the filling ingredients in a food processor.
Transfer the pie filling into a saucepan and cook until it thickens (a few minutes).
Transfer the filling to the pie pan and refrigerate until the filling hardens.
