Vegan French Toast Casserole
Slice the bread into cubes and transfer the bread into a baking dish.
Whisk up all of the ingredients in a large bowl.
Pour the custard mixture on top of the cubed bread.
Place the bread in the fridge and let it sit for an hour, up to overnight to absorb the custard mixture.
Bake the vegan French toast casserole for 35-40 minutes.
While the casserole is baking, make the vegan cream cheese maple glaze.
Top the casserole with the cream cheese glaze, fresh berries, and powdered sugar and enjoy!
