Vegan Lemon Blueberry Cake
In a large bowl, combine all of the wet and dry ingredients and whisk them together.
Sprinkle some flour on top of the blueberries. This helps them not sink to the bottom of the cake when baking.
Fold the blueberries into the cake batter.
Pour the batter into a loaf pan or round cake pan and bake.
While the cake is baking, prepare the frosting.
Spread the vegan lemon cream cheese frosting on top of the loaf and enjoy!
