Mini Banana Stuffed Pancakes
bananas oat flour whole wheat flour baking powder coconut sugar coconut oil peanut butter vanilla cinnamon salt dairy free milk
To a large bowl, add flour, baking powder, sugar, oil, peanut butter, vanilla, cinnamon, salt, and dairy free milk. Combine well.
Slice the banana. I sliced mine pretty thin, so that the mini pancake can bake well on both sides.
Add the banana slices to the batter. Gently stir them in so that they are fully covered in batter.
Add coconut oil to a pan on medium heat, then add pancakes. Cook for a minute on each side. Remove from pan and repeat with rest of pancakes.
Top the pancakes with maple syrup, powdered sugar, and fresh bananas. Enjoy!
