Lava Cake Recipe (vegan, gf)
oat flour cacao powder baking powder espresso powder dark chocolate peanut butter coconut oil maple syrup dairy-free milk vanilla salt chocolate chips
In a bowl, add the oat flour, cacao, baking powder, espresso, melted chocolate, peanut butter, coconut oil, maple, milk, vanilla, and salt.
Generously grease two small ramekins with coconut oil.
Dust cacao powder around the edges and bottom of the dishes.
Divide the chocolate mixture into the two prepared ramekins, but only fill them each halfway.
Melt chocolate and add it to a mini muffin cup. Refrigerate until hard and place in the middle of the lava cake batter.
Top with the remaining batter. Place in air fryer (instructions in recipe). Allow cake to cool and gently loosen edges with a knife.
Place a plate on top of the ramekin and carefully flip them upside down. Gently lift up the ramekin to reveal the chocolate molten lava cakes.
Sprinkle more cacao on top of the molten chocolate cakes and top with berries, if you wish.
Slice into them to reveal the gooey, molten center and enjoy !
