Apple Oat Bars (Vegan | GF)

Start by making the crust. In a large bowl, combine the oats, almond flour, baking powder, maple, melted coconut oil, vanilla, and salt. Mix well.
Now it’s time to make your filling. Cut and peel the apples, then slice them as thin as you can.
Place the apples in a large bowl, then add lemon juice & zest, sugar, cinnamon, vanilla, nutmeg, ginger, and salt. Mix well.
Transfer the apple filling to a pan. Cook the apples, then add in the cornstarch.
Transfer half of the oat filling to a pan. Top with the apple filling. Crumble the remaining oat topping on top and bake.
Let the oat bars cool and slice. Top them with the delicious vegan caramel sauce (instructions on how to make it in the post).
