Vegan Chickpea "Tuna" Salad
chickpeas chopped pickles chopped onion chopped celery nori sheets plant-based mayo mustard lemon juice garlic powder salt slice of bread olive oil arugula cherry tomatoes
Start by draining your can of chickpeas. Add them to a large bowl and mash up the chickpeas to the texture of your liking.
Then add the chopped pickles, onion, celery, and nori sheets. Also add in the mayo, mustard, lemon juice, garlic powder, and salt.
Add the chickpea salad on top of a piece of toast. I topped mine with arugula and cherry tomatoes.
