Start by adding the cookies to the food processor.
Pulse until the cookies forms a powder.
Next, add in the rest of the crust ingredients and pulse.
Line a muffin pan and add about 1 tablespoon of the crust to each muffin cup. Use your finger to pat the crust down. Set aside.
Now you are going to create the cheesecake filling.
Add all of the filling ingredients to a food processor and blend until you have a creamy consistency.
Add the filling to each muffin cup.
Refrigerate until the chocolate hardens.
Then add some vanilla frosting to a piping bag and frost the top of each chocolate cheesecake bite.
Add a strawberry and add a little extra frosting on the tip of the strawberry to form the Santa hat.
