This vegan granola takes less than 30 minutes to make, requires a few simple ingredients, and is nutritious and delicious too!

Ingredients
  

  • 1 cup oats
  • ¼ cup peanut butter
  • ¼ cup maple syrup
  • ½ cup mixed nuts

Instructions
 

  • To a large bowl, add the oats, peanut butter, and maple syrup. Combine them well so that all of the ingredients are evenly mixed.
  • Next, add the mixed nuts and incorporate them in with the rest of the ingredients.
  • For mixed nuts, I added almonds, cashews, walnuts, pecans, and pumpkin seeds, but feel free to add whatever kind you like!
  • Spread the granola on to a baking tray that you line with parchment paper.
  • Bake for about 15 minutes at 350*F/ 175*C. You can bake for longer (up to 20 minutes) if you like your granola crunchier!
  • Add the granola to some yogurt and fruit and enjoy.
