In a large bowl, combine the peanut butter, coconut sugar, stevia, oat flour, plant milk, baking soda, and salt.
Mix well until you get a thick cookie dough.
Form the dough into about balls (about 1 inch in diameter).
Using a fork, lightly press down on the cookies in an X shape, until you get the checkered board look that you see in the photos.
Bake the cookies for ten minutes at 350 degrees Fahrenheit.
Place the cookies on a cooling rack for 15 minutes.
After the cookies have cooled, add a jelly on top of half of the cookies.
Place a cookie without jelly on top of a cookie with jelly and you have your peanut butter and jelly sandwich cookies. Enjoy!
