Healthy Peanut Butter and Jelly Sandwich Cookies

Low sugar cookie versions of your favorite childhood sandwich!

  • 1 cup natural peanut butter
  • 3/4 cup oat flour
  • 1/4 cup stevia
  • 1/2 cup coconut sugar
  • 1/4 cup plant milk
  • 1 tsp baking soda
  • 1/4 tsp sea salt
  • strawberry jelly or jam


  • In a large bowl, combine the peanut butter, coconut sugar, stevia, oat flour, plant milk, baking soda, and salt.
  • Mix well until you get a thick cookie dough.
  • Form the dough into about balls (about 1 inch in diameter).
  • Using a fork, lightly press down on the cookies in an X shape, until you get the checkered board look that you see in the photos.
  • Bake the cookies for ten minutes at 350 degrees Fahrenheit.
  • Place the cookies on a cooling rack for 15 minutes.
  • After the cookies have cooled, add a jelly on top of half of the cookies.
  • Place a cookie without jelly on top of a cookie with jelly and you have your peanut butter and jelly sandwich cookies. Enjoy!
