Frozen Yogurt Cups

Ingredients
  

Granola Base

  • 1 large ripe banana
  • 1 cup oats
  • cup creamy natural peanut butter
  • 1-2 tablespoon maple syrup to taste
  • pinch of salt

Yogurt Filling

  • 2 cups vegan yogurt use a thick, creamy kind
  • 1 scoop vegan vanilla protein powder
  • 1-2 tablespoon maple syrup optional, to taste

Topping

  • berries
  • mango
  • kiwi
  • extra granola

Instructions
 

  • Mix together the granola ingredients. Line a muffin tin with muffin liners, then divide the granola into about 10 cups. Press down each cup to create an even layer.
  • Note: I saved some of the granola and toasted it in a pan until crispy. Then topped the cups with the toasted granola.
  • Whisk together the yogurt ingredients and top each cup with the mixture.
  • Top with berries and some extra granola. Freeze for a few hours or overnight and enjoy!

Notes

  • Topping Them: Save some of the granola mixture and toast it in a pan until crispy, then top the cups with the extra granola for added crunch.
  • Chopping Fruit: Make sure to chop the fruit into small bite-sized pieces so that you can fit a variety onto the cups.
  • Nut Butters: You can easily change the flavor of the yogurt cups by using an almond or cashew butter in place of peanut butter.
